How worried are you about them eating crops

Not very! This is a species that we drove extinct with 1800s-early 1900s level technology. If they ever become numerous enough to be a serious crop pest (which would be a sign of great success for the project!) we could just set a hunting season. Also, crop protection measures have advanced a lot in the last hundred years.
